STIR and Twisted Cork close

On Sunday, March 14, STIR Martini and Raw Bar and Twisted Cork, both owned by Solstice Restaurant Group, officially closed their doors. It was announced Saturday, March 13 via Facebook  with this message: “We are very sad to announce we are closing tomorrow (Sunday). We’re open regular hours tonight and tomorrow and would love to see you in for a farewell dinner or brunch. Enjoy Clinton Ellison tonight!” 

The Web site for both restaurants is now just a message from Solstice’s president, Matt Bomberger:
    
Dear Friends,
With deep regret, we must announce that we are closing both Twisted Cork and STIR. We have been proud to serve Bellevue with unique local concepts and are fortunate to have had your loyalty and support over the years. 
Our last night for service at STIR is March 13. Twisted Cork will be open through Sunday, March 14. 
As always, we encourage you to continue your support of locally owned businesses which, in turn, supports growth in the local community. You get to decide where you spend your money and it can make a tremendous difference in our community.

At this point, the reason for the closures is still unknown. No warning was given through Facebook or Twitter. The messages left on both social networking sites seemed optimistic for the restaurants until Saturday. Hopefully, more details are to come. 
      
The Hyatt, STIR and Twisted Cork’s former home, cannot keep their AAA Four Diamond status as outlined in the Diamond Rating Guidelines manual published by AAA. This states that in order to be a Four Diamond hotel, they are required to have an “upscale, full service restaurant” and a “separate lounge or bar area.”
If the Hyatt wants to maintain their status, the spots left over by STIR and Twisted Cork will be filled soon.
